It goes without saying that seafood forms the basis for most dishes on the island with sole, sea bass, mussels and prawns being the most used seafood for the main course. At the top of the list is lobster stew. It is said that the King of Spain visits the island on a regular basis just to sample this well known dish. If you have any room left, after the main course, there is a wide variety of sweets to choose from. These include sweets and pastries which include almond, macaroons and ensaimada which are pastries made from lard and sugar. To top these off the island has its own ice cream which is smooth and creamy in taste.

This world famous condiment is said to be named after its city of origin, Mahon. There have been a number of creative stories as to how this condiment came about. One of these stories revolves around the Duke of Richelieu who was in command of the island in the eighteenth century. The local story goes that the chef created it for the Duke. The other story goes that this creation was a gift to the Duke by his then lover who resided in Mahon or mahonesa. Whatever story you chose to believe the absolute truth will never be known. There is one dish that makes some people believe that one of these stories is true, is the use of mayonnaise and garlic as a dipping sauce that has existed for a long time.
